Recipes

Cordials have been used for hundreds of years in cooking, it was one the only ways of preserving fruit before the invention of fridges.
Jaynes grandmother Mabel was a renowned Cook from the New Forest at the turn of the last century,and she used the cordials to cook with. She was called in to cook for some of the top families, whose guests included King George V and Queen Mary.

Here are a few of the recipes.





Lemon trifle

Finely crush 5 ginger biscuits add to 4 small
Drizzle the glasses with 2 table spoons of lemon and lemon verbena cordial - diluted with 1 1/2 tablespoons of fresh orange juice.
Top with a layer of  fresh raspberries.
Whip 1 pint of fresh cream until it forms soft peaks,then
Gently stir in 7-8 table spoons of cordial (to taste) with more raspberries.
Spoon into the glasses and leave in the fridge for 30 minutes.
Serve chilled with amaretto biscuits.

Salmon Fillets

To marinade fish-Put Salmon into dish (2 salmon fillets) cover with 1 tablespoon of Lemongrass & Ginger Cordial,1 Tablespoon of soy sauce Drizzle some honey mix together well and put into fridge to infuse the flavours for at least 2 hours. Heat pan on hob, add salmon and cook basting with remaining marinade. Finish meal with some sticky rice and vegetables , also good on BBQs.

Duck breasts

Marinate 2 duck breasts with 1 tablespoon of  blackcurrant cordial for 1 1/2 to 2 hours. Cover and put into fridge, cook in hot pan to seal skin, turn over and either add another tablespoon of cordial or some blackcurrants. To finisk off, serve with saute potatoes and sesonal veg.
